Ingredients:

  • 3 lbs. MountainKing® Butter Gold Potatoes unpeeled, shredded
  • ¼ cup minced onions
  • 3 tbs. Olive oil
  • ¾ cup pizza sauce
  • 3 oz. sliced Canadian Bacon
  • 2 ¼ oz.black olives
  • 2 ¾ cups shredded mozzarella cheese
  • Salt and pepper

Directions:

  1. Squeeze and drain excess moisture from the shredded potatoes. In a large bowl, combine potatoes, onions, olive oil, salt and pepper to taste and 1 cup cheese. Mix well.
  2. Spray 13 inch deep dish pizza pan with non stick cooking oil. Press the potato mixture firm into pan and bake at 450 degree oven for 15 minutes.
  3. Take potato crust from oven and spread pizza sauce on top to within ½ inch of outside edge. Then, add in layers ½ cup cheese, Canadian bacon, olives. Top with remaining cheese and bake for 7-10 minutes.
  4. Let pizza cool, then cut with a pizza cutter and serve.
  5. Yield: 4 servings
