Ingredients:
- 3 lbs. MountainKing® Butter
Gold Potatoes unpeeled, shredded
- ¼ cup minced onions
- 3 tbs. Olive oil
- ¾ cup pizza sauce
- 3 oz. sliced Canadian Bacon
- 2 ¼ oz.black olives
- 2 ¾ cups shredded mozzarella cheese
- Salt and pepper
Directions:
- Squeeze and drain excess moisture from the shredded
potatoes. In a large bowl, combine potatoes, onions,
olive oil, salt and pepper to taste and 1 cup cheese.
Mix well.
- Spray 13 inch deep dish pizza pan with non
stick cooking oil. Press the potato mixture firm
into pan and bake at 450 degree oven for 15 minutes.
- Take potato crust from oven and spread pizza sauce
on top to within ½
inch of outside edge. Then, add in layers ½ cup cheese, Canadian
bacon, olives. Top with remaining cheese and bake for 7-10 minutes.
- Let
pizza cool, then cut with a pizza cutter and serve.
- Yield: 4 servings
