Ingredients:
- 2 lbs. MountainKing® Russet
Potatoes
- 2 cups shredded cheddar cheese- sharp
- 2 cups sour cream
- 2 cups diced cooked ham
- ¼ cup melted butter
- ½ to 1 cup green onions, chopped
- 2 cups corn flakes crushed (for topping only)
- Salt & Pepper to taste
Directions:
- Boil potatoes for 10-15 minutes until just tender.
Cool and dice, set aside.
- In a large bowl mix cheese,
sour cream, ham, onions, salt and pepper to taste.
Fold in potatoes gently. Mix 2 cups of cornflakes with
the ¼ cup melted butter.
- Pour the potato mixture
in a non stick rectangular baking dish, and spread
out evenly. Top the potato dish with the cornflake.
Bake for 15 minutes at 375 degrees.
- Serve with a side salad.
