Ingredients:

  • 2 lbs. MountainKing® Russet Potatoes
  • 2 cups shredded cheddar cheese- sharp
  • 2 cups sour cream
  • 2 cups diced cooked ham
  • ¼ cup melted butter
  • ½ to 1 cup green onions, chopped
  • 2 cups corn flakes crushed (for topping only)
  • Salt & Pepper to taste

Directions:

  1. Boil potatoes for 10-15 minutes until just tender. Cool and dice, set aside.
  2. In a large bowl mix cheese, sour cream, ham, onions, salt and pepper to taste. Fold in potatoes gently. Mix 2 cups of cornflakes with the ¼ cup melted butter.
  3. Pour the potato mixture in a non stick rectangular baking dish, and spread out evenly. Top the potato dish with the cornflake. Bake for 15 minutes at 375 degrees.
  4. Serve with a side salad.

    Yield: 4 servings
