Ingredients:
- 2 lbs. MountainKing® Butter
Golds
- ½ lb. ground beef
- 1 tsp fajita seasoning
- 1 cup shredded jalapeno jack cheese
- ½ cup sour cream
- 1 cup chopped tomatoes
- ¼ cup chopped cilantro
- Salsa if desired
Directions:
- Wash potatoes thoroughly and bake at 425 degrees
for 40 minutes or until tender. Cut in half lengthwise
and allow cooling.
- Cook the ground beef with fajita seasoning
and pepper to taste.
- Scoop out some of the flesh of the
potatoes leaving about ½” of flesh to
the skin. Fill each half potato with seasoned ground
beef
and top with cheese. Place under the broiler until
cheese is melted about 2 minutes.
- Remove from the oven and top
each half with sour cream. Sprinkle chopped tomatoes & cilantro
on top and serve with salsa.
Yield: 4 servings
