Ingredients:

  • 2 lbs. MountainKing® Butter Golds
  • ½ lb. ground beef
  • 1 tsp fajita seasoning
  • 1 cup shredded jalapeno jack cheese
  • ½ cup sour cream
  • 1 cup chopped tomatoes
  • ¼ cup chopped cilantro
  • Salsa if desired

Directions:

  1. Wash potatoes thoroughly and bake at 425 degrees for 40 minutes or until tender. Cut in half lengthwise and allow cooling.
  2. Cook the ground beef with fajita seasoning and pepper to taste.
  3. Scoop out some of the flesh of the potatoes leaving about ½” of flesh to the skin. Fill each half potato with seasoned ground beef and top with cheese. Place under the broiler until cheese is melted about 2 minutes.
  4. Remove from the oven and top each half with sour cream. Sprinkle chopped tomatoes & cilantro on top and serve with salsa.

    Yield: 4 servings
