Ingredients:
- 6 MountainKing® Russet
Potatoes
- 1 lb. lean ground beef
- ¾ cup chopped onions
- 1 package taco seasoning mix
- 1 cup mild salsa
- 1 cup shredded sharp cheddar cheese
- 16 oz. sour cream
- Chives optional
Directions:
- Oven bake the potatoes for 45 minutes or until fully
cooked- set aside.
- In a skillet sauté the onions and add the beef
and cook until the meat is no longer red. Drain the fat.
- Follow directions on the taco seasoning package and
add to the cooked beef. Add salsa and mix well.
- Cut and X through the baked potato and squeeze the
potato to open and fluff with a fork.
- Spoon the meat mixture into the potatoes, and top with
cheddar cheese and a dollop of sour cream.
- Sprinkle with chives if desired.
Yield: 4 servings
