Ingredients:

  • 6 MountainKing® Russet Potatoes
  • 1 lb. lean ground beef
  • ¾ cup chopped onions
  • 1 package taco seasoning mix
  • 1 cup mild salsa
  • 1 cup shredded sharp cheddar cheese
  • 16 oz. sour cream
  • Chives optional

Directions:

  1. Oven bake the potatoes for 45 minutes or until fully cooked- set aside.
  2. In a skillet sauté the onions and add the beef and cook until the meat is no longer red. Drain the fat.
  3. Follow directions on the taco seasoning package and add to the cooked beef. Add salsa and mix well.
  4. Cut and X through the baked potato and squeeze the potato to open and fluff with a fork.
  5. Spoon the meat mixture into the potatoes, and top with cheddar cheese and a dollop of sour cream.
  6. Sprinkle with chives if desired.

    Yield: 4 servings
