Ingredients:

  • 6 medium size MountainKing® Red Potatoes
  • 8 oz. fully cooked salami
  • ½ cup medium pitted black olives
  • 1 cup cherry tomato halves
  • 1 cup broccoli, small flowerettes
  • 1 bottle of Italian dressing
  • 1/3 cup grated parmesan cheese

Directions:

  1. Wash potatoes thoroughly and scrub well. Cut potatoes into ½ inch cubes leaving skins on. Boil potatoes for 10 minutes or until tender, then drain and let cool.
  2. Cut salami into strips 1/2 “ X 1”. Mix together potatoes, salami, olives, tomatoes and broccoli.
  3. Dress salad lightly with Italian dressing to coat thoroughly. Fold in parmesan cheese. Chill until serving

    Yield: 4 servings
