Ingredients:
- 6 medium size MountainKing® Red
Potatoes
- 8 oz. fully cooked salami
- ½ cup medium pitted black olives
- 1 cup cherry tomato halves
- 1 cup broccoli, small flowerettes
- 1 bottle of Italian dressing
- 1/3 cup grated parmesan cheese
Directions:
- Wash potatoes thoroughly and scrub well. Cut potatoes
into ½ inch cubes leaving skins on. Boil potatoes
for 10 minutes or until tender, then drain and let cool.
- Cut salami into strips 1/2 “ X 1”. Mix together
potatoes, salami, olives, tomatoes and broccoli.
- Dress
salad lightly with Italian dressing to coat thoroughly.
Fold in parmesan cheese. Chill until serving
