| There is an interesting article in Prevention Magazine on resistant starch which is a unique kind of dietary fiber that increases your body's ability to burn fat and helps fill you up while reducing overall hunger. Resistant starch occurs naturally in potatoes and particularly when potatoes are cooked first then eaten cooled - as in potato salad. |

used to make the most delicious mashed potatoes! The potato ricer processes the potatoes through very small holes which prevents
the starch from breaking down and creating a "gummy" consistency. |

petite size, they are great time savers (will cook in only
20 minutes!!) and there is no need to peel them. In fact, roasting
them whole in the oven with olive oil and fresh herbs like rosemary and thyme is
