Potato History
The potato, a name derived from the native American Indian word "batata",
was first cultivated by the Inca Indians in Peru over 4,000 years ago.
In 1536 Spain brought them to Europe, soon France embrased them as a
solution to reoccuring famine and Thomas Jefferson served "French
Fries" in the White House as an introduction in the U.S.
Potatoes are now grown in over 125 countries around the world and in
all 50 states. Yellow-fleshed potatoes are common in Europe and South
America. Sometimes referred to as Yukon Golds, are actually the preferred
potato in most countries outside of North America.

purpose potato because of their cooking versatility and buttery
creamy texture. Not
only
are they the perfect choice
for mashing, baking and boiling, they are packed with beta
carotene, anthoxanthins, fiber, potassium and are only 100
calories each making them a fabulous addition to any
meal.
Mashing Potatoes
We recommend that you hand mash potatoes to keep that fluffy creamy
texture. Electric mixers are great time savers but it is very
easy to over process the potatoes and end up with a thick gummy
consistency. This occurs when the starch in the potatoes is
broken down. For extremely fluffy potatoes, peel potatoes,
boil and use a ricer to mash the potatoes. Add the warm ingredients
with a few mixing strokes.
Leave those skins on and reap the health
benefits
The nutrients in potatoes resides just under the skins. Not only
will you increase your vitamin and mineral consumption, you can
save time too.
