Mexican Style Potato Skins

Serves 6-8

Ingredients:

Directions:

  1. Preheat oven to 450°F.
  2. Bake potatoes 30 minutes or until easily pierced with a fork. Remove from oven. Cut potatoes in half. Allow to cool slightly and then scoop out potato with spoon, leaving 1/4 inch shell.
  3. Bring oven to broil. Place potatoes on a baking sheet with scooped side up. Top each potato with crumbled bacon and shredded cheese. Return to oven and broil 4-5 minutes or until golden and slightly crispy.
  4. Remove from oven and top each potato with a spoon full of salsa, sour cream and top with minced cilantro.
  5. Serve immediately.
