Twice Baked Potato & Chicken Lasagna

Serves 5-7

Ingredients:

  • 4-6 MountainKing® Jumbo Russets, baked
  • 2-3 boneless, skinless chicken breasts, cooked & diced
  • 1 cup sour cream
  • 1 lb cooked bacon (optional)
  • 2 cups steamed broccoli
  • 2-4 types of shredded cheeses (your choice)
  • 2 cups melted butter
  • dash of salt and pepper
  • 8x11" nonstick pan

Directions:

  1. Bake potatoes for 45 minutes in 425 degree oven.
  2. Carefully remove fluffy flesh from potatoes and season to taste with salt and pepper in medium sized mixing bowl.
  3. Begin layering ingredients inside the potato skin. Start with chicken as the bottom layer. Alternate the remaining ingredients ending with cheese as top layer. Drizzle butter over the top.
  4. Place in nonstick pan, cover with foil and bake at 365 degrees for 20 minutes.
  5. Serve with garden salad and garlic bread.
