Twice Baked Potato & Chicken
Lasagna

Ingredients:
- 4-6 MountainKing® Jumbo
Russets, baked
- 2-3 boneless, skinless chicken breasts, cooked & diced
- 1 cup sour cream
- 1 lb cooked bacon (optional)
- 2 cups steamed broccoli
- 2-4 types of shredded cheeses (your choice)
- 2 cups melted butter
- dash of salt and pepper
- 8x11" nonstick pan
Directions:
- Bake potatoes for 45 minutes in 425 degree oven.
- Carefully remove fluffy flesh from potatoes and season
to taste with salt and pepper in medium sized mixing
bowl.
- Begin layering ingredients inside the potato skin.
Start with chicken as the bottom layer. Alternate the
remaining ingredients ending with cheese as top layer.
Drizzle butter over the top.
- Place in nonstick pan, cover with foil and bake at
365 degrees for 20 minutes.
- Serve with garden salad and garlic bread.
