Sloppy Joe Spuds

Ingredients:
- 4 MountainKing Russet Potatoes
- 1 pound ground beef
- 1 6 oz can tomato paste
- 1 package sloppy joe seasoning mix
- 1 cup cheddar cheese
- 1 cup white onions, chopped
- salt & pepper to taste
Directions:
- Preheat oven to 425 degrees.
- Pierce potatoes with a fork 4 or 5 times around the entire potato. Rub potato with vegetable oil and sprinkle with salt. Bake 25-30 minutes or until easily pierced with a fork.
- Meanwhile, follow sloppy joe mix instructions.
- Remove cooked potatoes from oven, slice open and fill each potato with sloppy joe beef mix. Top with grated cheddar cheese and onions. Serve immediately.
