Sloppy Joe Spuds

Ingredients:

  • 4 MountainKing Russet Potatoes
  • 1 pound ground beef
  • 1 6 oz can tomato paste
  • 1 package sloppy joe seasoning mix
  • 1 cup cheddar cheese
  • 1 cup white onions, chopped
  • salt & pepper to taste

Directions:

  1. Preheat oven to 425 degrees.
  2. Pierce potatoes with a fork 4 or 5 times around the entire potato. Rub potato with vegetable oil and sprinkle with salt. Bake 25-30 minutes or until easily pierced with a fork.
  3. Meanwhile, follow sloppy joe mix instructions.
  4. Remove cooked potatoes from oven, slice open and fill each potato with sloppy joe beef mix. Top with grated cheddar cheese and onions. Serve immediately.
