Irish Beef in Guiness

Ingredients:

  • 4 MountainKing® Butter Gold Potatoes or Butter Reds peeled and quartered
  • 2 1/2 lb beef stew meat
  • 2 large onions
  • 6 medium carrots
  • 2 tbsp seasoned flour
  • 1 tablespoon bacon fat or beef dripping
  • 1 cup of Guiness and water mixed
  • sprig of parsley

Directions:

  1. Cut the beef into chunks and peel and slice the onions and carrots.
  2. Toss the beef in the flour and brown quickly in hot fat. Remove the
    beef and fry the onions gently until transparent.
  3. Return the beef and add the carrots, potatoes and liquid. Bring just to a boil, reduce the heat to a very gentle simmer, cover and cook for 1 1/2 - 2 hours.
  4. Check that the dish does not dry out, adding more liquid if necessary.
