Serves 4-6
Ingredients:
- 6 small to medium MountainKing® Butter
Red Potatoes
- 4 tablespoons butter
- 4 teaspoons fresh minced chives
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 1 teaspoon salt
- White pepper to taste
Stove Top Instructions
- Quarter potatoes and boil & until tender (12-15
minutes). Drain and return to pan.
- Prepare Sauce: In a small saucepan over medium heat
add butter, lemon juice, zest, chives, salt & pepper.
Cook until butter melts.
- Pour Sauce over potatoes & stir gently to coat.
Serve immediately.
Microwave Instructions
- Microwave whole potatoes on HIGH 7-8 minutes
or until tender. Remove from microwave and cut into quarters.
- Prepare Sauce: In a small bowl add butter,
lemon juice, zest, chives, salt & pepper. Microwave
on MED 2 minutes or until butter is melted.
- Pour Sauce over potatoes & stir gently to coat.
Serve immediately.
