Lemon Chive Butter Reds

Serves 4-6

Ingredients:

  • 6 small to medium MountainKing® Butter Red Potatoes
  • 4 tablespoons butter
  • 4 teaspoons fresh minced chives
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon peel
  • 1 teaspoon salt
  • White pepper to taste

Stove Top Instructions

  1. Quarter potatoes and boil & until tender (12-15 minutes). Drain and return to pan.
  2. Prepare Sauce: In a small saucepan over medium heat add butter, lemon juice, zest, chives, salt & pepper. Cook until butter melts.
  3. Pour Sauce over potatoes & stir gently to coat. Serve immediately.

Microwave Instructions

  1. Microwave whole potatoes on HIGH 7-8 minutes or until tender. Remove from microwave and cut into quarters.
  2. Prepare Sauce: In a small bowl add butter, lemon juice, zest, chives, salt & pepper. Microwave on MED 2 minutes or until butter is melted.
  3. Pour Sauce over potatoes & stir gently to coat. Serve immediately.
