Serves 4
Ingredients:
- 2 medium MountainKing® Russet Potatoes (6-8 ounces each)
- 1/2 pound sirloin, cut into one inch cubes
- 1 skinless chicken breast, cut into one inch cubes
- 1 red bell pepper, cut into one inch slices
- 1 white onion, cut into one inch slices
- 6 button mushrooms, cut in half
- 2 tablespoons fresh thyme
- 2 tablespoons vegetable oil
- salt & pepper to taste
- 4 metal skewers
Directions:
- Microwave potatoes together on HIGH 6 minutes.
- Remove from microwave and slice into 1 inch rounds, then cut in
half.
- Place all ingredients in a large bowl and mix well.
- Place the following on each skewer: red bell pepper, beef, onion,
fingerling, mushroom, chicken, repeat.
- Place skewers on grill over medium/high heat for 6-8 minutes,
turning occasionally.
