6 medium- large MountainKing® Gold
Potatoes or Butter Red Potatoes, peeled and
quartered
4 cups diced savoy cabbage (green cabbage can be substituted)
1 cup warm milk
3 tablespoons butter
2 leeks chopped, whites only
salt and pepper to taste
Boil potatoes until tender when
pierced with a fork—about
20 minutes.
Meanwhile, steam cabbage and leeks for 5 minutes.
Mash potatoes, add milk, butter, cabbage, leeks, salt
and pepper to taste. Serve immediately.
