Herbed Low Fat Butter Red Potatoes

Serves 4
- Ingredients:
- 12 Petite
MountainKing® Butter Red Potatoes, washed
- 1 cup water
- 1 Tablespoon unsalted butter
- Coarse (kosher) salt, to taste
- Course ground black pepper, to taste
- 1 Tablespoon chopped fresh Italian Parsley (flat-leaf)
or fresh dill
Directions:
- Place potatoes and
water in saucepan and bring to a boil. Reduce the heat
to medium, cover and cook shaking the pan occasionally
until the potatoes are tender. About 30 minutes.
- Drain the potatoes
and return them to the saucepan over low heat to remove
the remaining moisture. About 15 seconds.
Remove from heat and add butter, salt, pepper and
parsley. Toss well and serve immediately.
