5 flounder filets (may substitute grouper, red snapper or
3 MountainKing® Russet Potatoes, shredded
1 egg (beaten)
1/2 cup all purpose flour
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons baking powder
1/2 cup olive oil
optional: 2 teaspoons sage
1 Tablespoon chopped fresh Italian Parsley (flat-leaf) or
1. In a mixing bowl
combine shredded potatoes, egg, flour, salt, pepper, baking
powder and sage (optional).
2. Heat oil in frying pan medium-high heat.
3. Dredge each filet in potato mixture and sear in frying
pan cooking appx. 3 minutes on each side.
4. Serve immediately.
