Ingredients:
1lb MountainKing® Russet Potatoes, chopped 1 inch dice
1 lb parsnips, chopped 1 inch dice
1 lbs carrots, chopped 1 inch dice
1 head garlic, peeled
2 large purple onions, quartered
1/2 lb brussel sprouts, halved
1/2 cup extra virgin olive oil
2 Tablespoons fresh Thyme
1/2 teaspoon Kosher salt
1 1/2 teaspoon Cayenne pepper
1 Tablespoon freshly ground black pepper
1 Tablespoon fresh parsley, minced
1. Preheat oven to 400
degrees.
2. Spread 2 TBS olive oil on baking sheet. Set aside.
3. Combine all ingredients except parsley in a large bowl
and stir.
4. Spread evenly on baking sheet in one layer and bake 50
minutes.
5. Garnish with parsley and serve immediately
