1 1/3 pounds (4 medium)
MountainKing® Butter Gold potatoes
cut into 1-inch dice
1-tablespoon olive oil
1 large clove garlic, pressed
4 pork chops (3/4 inch thick)
Salt and pepper, to taste
1 1/2 teaspoons butter
1/2-cup low fat milk
1 teaspoon fresh sage
In 2-quart saucepan
over medium heat, boil potatoes until tender. Meanwhile,
mix olive oil, salt, pepper, garlic and rub on
both sides of pork chops.
Coat
large non-stick
skillet
with vegetable cooking spray. Add chops and over
medium heat pan fry until chops are lightly browned,
about 7 minutes on each side. Drain potatoes; shake in
pan over low heat 1 minute. Remove from heat and "smash" potatoes,
leaving them lumpy. Mix in butter, milk and sage.
Season
with salt
and pepper. Serve immediately. HINT: For fluffier potatoes,
warm milk in the microwave 30
seconds before adding to potatoes.
