Cooking Time: 25 minutes
Ingredients:
- 4 MountainKing® Jumbo Russet Potatoes
- 1 pound ground beef or turkey
- 1 package chili seasoning
- 2 cans tomato sauce (8 oz each)
- 1 can kidney beans, drained (15 oz)
- 2 cups cheddar cheese, shredded
- 1 cup white onion, chopped (optional)
Directions:
- Wash and dry potatoes. Place potatoes in the
microwave (2 at a time) and cook on high 10
minutes or until easily pierced with a fork.
- Meanwhile, in a skillet over medium heat,
brown meat; drain fat. Add chili seasoning
packet, tomato sauce and kidney beans; cook
10 minutes.
- Place potatoes on a baking sheet. Cut open
and fill each with meat mixture. Top each potato
with cheese. Bake in oven 5 minutes or until
cheese is melted.
- Remove from oven and top with onions.
Serve immediately.
