MountainKing Potatoes

Ingredients:

  • 4 MountainKing® Jumbo Russet Potatoes
  • 1 pound ground beef or turkey
  • 1 package chili seasoning
  • 2 cans tomato sauce (8 oz each)
  • 1 can kidney beans, drained (15 oz)
  • 2 cups cheddar cheese, shredded
  • 1 cup white onion, chopped (optional)

Directions:

  1. Wash and dry potatoes. Place potatoes in the
    microwave (2 at a time) and cook on high 10
    minutes or until easily pierced with a fork.
  2. Meanwhile, in a skillet over medium heat,
    brown meat; drain fat. Add chili seasoning
    packet, tomato sauce and kidney beans; cook
    10 minutes.
  3. Place potatoes on a baking sheet. Cut open
    and fill each with meat mixture. Top each potato
    with cheese. Bake in oven 5 minutes or until
    cheese is melted.
  4. Remove from oven and top with onions.
    Serve immediately.
