Cooking Time: 25 minutes
Ingredients:
- 4 MountainKing® Jumbo Russet Potatoes
- 2 cups Alfredo pasta sauce (use a season packet
and follow instructions or use jarred sauce)
- 2 cans chicken, drained (9.75 oz each)
- 1 teaspoon chopped garlic
1 cup frozen mixed vegetables, thawed
- 1 cup parmesan
- salt and pepper to taste
Directions:
- Preheat oven 450 degrees.
- Wash and dry potatoes. Place potatoes in the
microwave (2 at a time) and cook on high 10
minutes or until easily pierced with a fork.
- Meanwhile, in a skillet over medium heat, add
Alfredo pasta sauce. Then add garlic, chicken,
vegetables, salt and pepper to taste. Cook 5
minutes.
- Place potatoes on a baking sheet. Cut open
and fill each with Alfredo mixture. Top each
potato with parmesan cheese.
- Bake 5 minutes or until cheese is melted.
