Cooking Time: 25 minutes
Ingredients:
- 4 MountainKing® Jumbo Russet Potatoes
- 1 pound ground turkey or beef
- 1 package taco seasoning
- 3/4 cup water
- 1 can black beans, rinsed
- 2 cups jack cheese, shredded
- 1 cup salsa
- 1 cup sour cream
- 1 cup green onions, sliced
Directions:
- Wash and dry potatoes. Place potatoes in the
microwave (2 at a time) and cook on high 10
minutes or until easily pierced with a fork.
- Meanwhile, in a large skillet over mediumhigh
heat, brown meat; drain fat.
- Add taco seasoning, water, and beans; cook 5
minutes.
- Place potatoes on a baking sheet. Slice each
potato open and fill with meat mixture. Top
with cheese, salsa, sour cream and green onions.
Serve immediately.
