Serves 6-8

Ingredients:

  • 12 MountainKing® Red Potatoes
  • 2 pounds green beans
  • 1⁄2 cup Kalamata olives, sliced, (optional)
  • 1⁄2 cup red onion, thinly sliced
  • 2 cloves garlic
  • 1⁄2 cup olive oil
  • 1⁄2 cup red wine vinegar
  • 1 tablespoon dry mustard
  • 1 teaspoon salad herbal seasoning
  • Salt and pepper to taste

Directions:

  1. Wash and slice potatoes, no need to peel and boil until tender.
    Drop the green beans in boiling water for 2 minutes, just until they turn bright green. Immediately drain and submerge in ice water to stop the cooking. (You want the beans to remain crisp).
  2. Combine the beans and potatoes in a large bowl.
  3. Place the garlic, olive oil, vinegar and seasonings in the blender. Mix until combined. Pour over the potato mixture and let the flavors meld together.
    Serve cold.
