Serves 6-8
Ingredients:
- 12 MountainKing® Butter
Red Potatoes
- 2 pounds green beans
- 1⁄2 cup Kalamata olives, sliced,
(optional)
- 1⁄2 cup red onion, thinly sliced
- 2 cloves garlic
- 1⁄2 cup olive oil
- 1⁄2 cup red wine vinegar
- 1 tablespoon dry mustard
- 1 teaspoon salad herbal seasoning
- Salt and pepper to taste
Directions:
- Wash
and slice potatoes, no need to peel and
boil until tender.
Drop the green beans in boiling water
for 2 minutes, just until they turn bright
green. Immediately drain and
submerge in ice water to stop the cooking.
(You want the beans to remain crisp).
- Combine the beans and potatoes in a
large bowl.
- Place
the garlic, olive oil, vinegar and seasonings
in the blender. Mix until combined. Pour
over the potato mixture and let the flavors
meld together.
Serve cold.
