Serves 4-6
Ingredients
- 1 1/4 pounds MountainKing® Field Fresh
Gold Potatoes, scrubbed
- 2 ounces smoked salmon, cut into thin strips
- 1/2 pound cooked shelled shrimp
- 1 cup seedless white grapes, halved
- 1/2 cup pecan nuts
- 1 tbsp. snipped fresh chives
- 1 tbsp. chopped fresh dill, for garnish
Directions
- 3/4 cup of your favorite vinaigrette or Italian dressing
- Cook potatoes in lightly salted water 15-20 min. until
tender.
- Drain well. When cool, slice potatoes into a salad bowl.
- Add smoked salmon, shrimp, grapes, pecans and snipped
chives. Gently toss together.
- Pour the dressing over the salad.
- Toss lightly to coat, sprinkle with dill and serve.
