Potato Salad with Salmon & Shrimp

Serves 4-6

Ingredients

  • 1 1/4 pounds MountainKing® Field Fresh Gold Potatoes, scrubbed
  • 2 ounces smoked salmon, cut into thin strips
  • 1/2 pound cooked shelled shrimp
  • 1 cup seedless white grapes, halved
  • 1/2 cup pecan nuts
  • 1 tbsp. snipped fresh chives
  • 1 tbsp. chopped fresh dill, for garnish

Directions

  1. 3/4 cup of your favorite vinaigrette or Italian dressing
  2. Cook potatoes in lightly salted water 15-20 min. until tender.
  3. Drain well. When cool, slice potatoes into a salad bowl.
  4. Add smoked salmon, shrimp, grapes, pecans and snipped chives. Gently toss together.
  5. Pour the dressing over the salad.
  6. Toss lightly to coat, sprinkle with dill and serve.
