Thyme Roasted Vegetables

Ingredients:

  • 1 lb MountainKing® Russets, chopped 1 inch dice
  • 1 lb parsnips, chopped 1 inch dice
  • 1 lbs carrots, chopped 1 inch dice
  • 1 head garlic, peeled
  • 2 large purple onions, quartered
  • 1/2 lb brussel sprouts, halved
  • 1/2 cup extra virgin olive oil
  • 2 Tablespoons fresh Thyme
  • 1/2 teaspoon Kosher salt
  • 1 1/2 teaspoon Cayenne pepper
  • 1 Tablespoon freshly ground black pepper
  • 1 Tablespoon fresh parsley, minced

Directions:

  1. Preheat oven to 400 degrees.
  2. Spread 2 TBS olive oil on baking sheet. Set aside.
  3. Combine all ingredients except parsley in a large bowl and stir.
  4. Spread evenly on baking sheet in one layer and bake 50 minutes.
  5. Garnish with parsley and serve immediately.
