Ingredients:
- 1 lb MountainKing® Russets,
chopped 1 inch dice
- 1 lb parsnips, chopped 1 inch dice
- 1 lbs carrots, chopped 1 inch dice
- 1 head garlic, peeled
- 2 large purple onions, quartered
- 1/2 lb brussel sprouts, halved
- 1/2 cup extra virgin olive oil
- 2 Tablespoons fresh Thyme
- 1/2 teaspoon Kosher salt
- 1 1/2 teaspoon Cayenne pepper
- 1 Tablespoon freshly ground black pepper
- 1 Tablespoon fresh parsley, minced
Directions:
- Preheat oven to 400 degrees.
- Spread 2 TBS olive oil on baking sheet. Set aside.
- Combine all ingredients except parsley in a large
bowl and stir.
- Spread evenly on baking sheet in one layer and bake
50 minutes.
- Garnish with parsley and serve immediately.
