Caldo De Queso (Cheese Soup)

Serves 4
Ingredients:
- 3 medium MountainKing® Butter
Golds Potatoes
- 1⁄2 lb. Mexican white cheese
- 6 green chiles, roasted and peeled
- 1 onion, minced
- 1⁄4 cup tomato sauce
- 1⁄2 cup milk
- 2 tbsp. oil
- 6 cups water
- 1 tsp. salt
- 1⁄2 tsp. pepper
Directions:
- Peel and dice the
potatoes. Fry in oil a few minutes, or until glazed. Add
the other ingredients, crumbling
in the
cheese. Cook at least 25 minutes, or until potatoes
are cooked. Serve immediately.
