Mashing Potatoes
We recommend that you hand mash potatoes to keep that fluffy creamy texture.
Electric mixers are great time savers but it is very easy to over
process the potatoes and end up with a thick gummy consistency. This
occurs when the starch in the potatoes is broken down. It's best
to mash potatoes when they are hot and add warm ingredients. For
extremely fluffy potatoes, peel potatoes, boil and use a ricer to
mash the potatoes. Add the warm ingredients with a few mixing strokes.
