| Ingredients |
| 1 medium MountainKing Russet Potato (6 ounces) |
| 1 tablespoon vegetable oil |
| optional ingredients: |
| 1 tablespoon butter |
| 2 tablespoons cheddar cheese, grated |
| 1 tablespoon cooked bacon, chopped |
| 1 tablespoon sour cream |
| 1 teaspoon chives, chopped |

| Directions |
| 1. Preheat oven to 425 degrees. |
| 2. Wash and dry potato. |
| 3. Pierce potato 4 or 5 times with a scewer or knife. |
| 4. Lightly coat potato with vegetable oil |
| 5. Place in microwave on high for 6 minutes. |
| 6. Remove from microwave and place in oven for 2 minutes or until potato skin is crisp. |
| 7. Remove from oven and slice open. Add butter, cheese, sour cream, bacon and chives. Serve immediately. |
