Classic Mashed Potatotes
Ingredients
2 lbs MountainKing Russet Potatoes peeled, diced
4 tablespoons butter (room temperature)
1/4 cup half & half (warm)
1 teaspoons salt
white pepper to taste
2 green onions sliced (optional)
 
Directions
  1. Place the potato chunks in a 2-quart saucepan with water to cover and add salt. Boil for 8-10 minutes, or until potatoes are fork-tender. Drain well, leaving potatoes in saucepan.
  2. Add the butter and half & half. Using a potato masher, mash potatoes and mix well.
  3. Add salt and pepper to taste. Garnish with green onions (optional). Serve immediately.
