| 2 lbs MountainKing Russet Potatoes peeled, diced |
| 4 tablespoons butter (room temperature) |
| 1/4 cup half & half (warm) |
| 1 teaspoons salt |
| white pepper to taste |
| 2 green onions sliced (optional) |

| Directions |
- Place the potato chunks in a 2-quart saucepan with water to cover and add salt. Boil for 8-10 minutes, or until potatoes are fork-tender. Drain well, leaving potatoes in saucepan.
- Add the butter and half & half. Using a potato masher, mash potatoes and mix well.
- Add salt and pepper to taste. Garnish with green onions (optional). Serve immediately.
