| 2 MountainKing Gold Potatoes |
| 3 Tablespoons olive oil |
| 2 garlic cloves, sliced |
| 1 pizza dough |
| 1 red onion sliced |
| 1 1/4 cup fresh mozzarella, sliced |
| 2 teaspoons fresh rosemary |
| 2 Tablespoons shaved parmesan cheese |
| salt & pepper to taste |

| Directions |
- Preheat oven to 425 degrees.
- Cook potatoes in microwave 4-6 minutes, until soft. Let cool slightly and slice into 1/4 inch rounds.
- Heat 2 Tablespoons oil in pan over medium-high heat. Add garlic and potatoes and cook for 2 minutes. Turn potatoes over and cook another 2 minutes - until golden. Remove from heat.
- Brush pizza dough with remaining oil and layer onions, then potatoes, then mozzarella cheese. Add salt and pepper to taste and top with parmesan cheese.
- Bake 15-20 minutes untill dough is crisp and cheese is melted. Serve immediately.
