| Ingredients |
| 4 MountainKing® Russet Potatoes,
cut in 1 inch dice |
| 1 pound ground beef |
| 1 - 6 oz can tomato paste |
| 1 package sloppy joe seasoning mix |
| 1 cup cheddar cheese |
| 1 cup white onions, chopped |
| salt & pepper to taste |

| Directions |
| 1. Preheat oven to 425 degrees. |
| 2. Wash and dry potatoes. |
| 3. Pierce potatoes with a fork 4 or 5 times around the entire potato. Rub potato with vegetable oil and sprinkle with salt. Bake 25-30 minutes or until easily pierced with a fork. |
| 4. Meanwhile, follow sloppy joe mix instructions. |
| 5. Remove cooked potatoes from oven, slice open and fill each potato with sloppy joe beef mix. Top with grated cheddar cheese and onions. Serve immediately. |
